The Langley Hotel, Buckinghamshire, has unveiled its gastronomic vision with the announcement of new flagship restaurant, Cedar.
Occupying a grand and bright space within the historic Main House, offering expansive views over the grounds and serpentine lake, Cedar also boasts a vast adjoining terrace for al fresco dining.
The hotel’s principal restaurant, Cedar will focus on fresh flavours for all-day dining, using local and seasonal British produce.
It will be overseen by head chef Marco Ardemagni and head pastry chef Francesco Martella, who join the opening team from roles at Michelin-starred outlets including La Posta Vecchia and Il Pellicano.
Offering a choice of lighter small plates, primi and larger mains, all dishes are designed for sharing, creating a relaxed and informal dining atmosphere.
The chef plans to create an extensive organic kitchen garden over time, while produce will be sourced primarily from local home counties producers, and larder ingredients including pasta, pickles, jams and bakery products will be created in-house.
Dishes will be cooked simply to allow ingredients to shine, with larger cuts of meat grilled to perfection in the restaurant’s Josper grill.
Fresh produce will be at the heart of the light, vegetable-focused small plates, such as roasted parsnips with pears, spiced almonds and mustard leaves and slow-cooked egg with celeriac and brassica.
Primi dishes – available in starter or main sizes – include goat’s curd and nettle pinched agnolotti, sweet pea and black truffle, and fregula, caramelised onion, braised beef cheek, bergamot and sorrel.
Cedar will offer a variety of showstopper sharing dishes, including grilled rib steak with peppercorn sauce and lemon-miso charred stone bass with béarnaise. Fresh, flavourful mains will include red snapper and mussels in broth, with croutons and seaweed butter, and lamb chop and shoulder with smoked aubergine, broad beans and pecorino romano.
Guests with a sweet tooth will not be disappointed by the inventive and playful dessert options. Delectable desserts will include millefeuille with macadamia mousse, rhubarb and dill compote; pistachio parfait with white and dark chocolate mousse and mint meringue, and peanut and chocolate cake with sesame and miso cream and dark chocolate shards. Recalling the famed dessert trolleys of grand dame hotels, Cedar will also offer a nostalgic selection of delicious miniature patisserie, mignardises and pralines from a roving dessert trolley.
As the most important meal of the day, breakfasts at Cedar will be a sumptuous affair, offering variety to cater to every palate and appetite.
Hearty plates of braised beef cheek with hash brown, roasted tomato and fried egg, and brioche French toast with caramelised apple, cinnamon and crème fraiche will satisfy hungry diners, while the health-conscious can enjoy vibrant cold-pressed juices, bircher muesli with green apple, toasted nuts and lemon balm, and tropical fresh fruit with yuzu pearls and candied ginger.
The Langley will also be home to a number of daytime dining options, ideal for guests seeking a relaxed bite to eat. Next door to Cedar, the Drawing Room will offer elaborate afternoon teas, with delicate sandwiches and dainty patisserie accompanied by an array of teas and flutes of champagne.
For those seeking a relaxed daytime meal, Churchill Bar will offer light bites, sandwiches and grazing boards of artisan cheeses and charcuterie throughout the day, in addition to heartier options including poached lobster tagliolini with cherry tomatoes, lemon peel and basil cress, and cacio e pepe pizza with mozzarella, pecorino romano, black pepper, wild mushroom and truffle oil.
Nestled amidst The Langley Spa, the Spa Lounge will serve a plethora of nourishing dishes, focused on light, fresh and vibrant ingredients. Dishes will include salmon ceviche with grapefruit, spring onions, chilli, sweetcorn and sea purslane, and Norfolk quinoa with salt baked beetroot, fresh spinach, sweet potato, cashew and coriander dressing, washed down with fresh juices and smoothies. Spa goers can satisfy their sweet tooth with energy snacks and nutritious desserts such as raw cocoa and coconut mouse, and beetroot and buttermilk ‘arctic roll’ with raspberry and tarragon sorbet.The Langley and Cedar will open in early summer 2019.
