Multi award-winning Gloucestershire hotel, Corse Lawn House is delighted to announce the appointment of new head chef Chris Monk.
At the age of 27, Monk is the youngest head chef in the hotel’s 40-year history to take the reins of its esteemed kitchen. Corse Lawn House gave Monk his first introduction to a culinary career and it was here that he trained in his early teens, sparking his passion for food.
He will re-join the family-run team at Corse Lawn House, a hotel which receives critical acclaim as a dining destination, something he is looking forward to building on whilst bringing his own creative flair to the kitchen. Within his new role, Monk will lead all culinary operations, managing the hotel’s signature Anglo-French menus and array of fresh produce.
He said: “It is such an honour to be taking my first Head Chef role at Corse Lawn House. The hotel has always had fond memories for me. I look forward to putting my own stamp on the kitchen whilst keeping the core values it has always held, cooking everything fresh, from the Brioche for breakfast, the Scones for afternoon teas to the Petit Fours, everything is made in house and using local, seasonal produce. We even use all game from within a ten-mile radius, that is really exciting!”
Monk has a rich culinary background having worked in a number of highly regarded establishments including the two Michelin starred Le Champignon Sauvage and renowned Hampshire Michelin starred restaurant, The Montagu Arms Hotel at Beaulieu. In recent months, Chris has been working alongside Corse Lawn House’s Owner & Proprietor, Baba Hine to learn the ropes of the role before taking the lead as Head Chef from January 2019.
Owner Baba Hine said: “We are delighted to welcome back Chris as a core member of our hotel team here at Corse Lawn House. Chris is a delightful young man and his passion for food comes through on the plate. He is a fantastic asset to our team – extremely driven, whilst wonderfully calm, and prepared to put in a huge amount of work. Chris has been doing a terrific job so far and our guests are relishing his menus. It’s no mean feat taking on a kitchen with such standing, yet I have absolute confidence in Chris and we are all excited to watch him flourish.”
The country house hotel has recently celebrated an outstanding 40 years in business. An institution to many, Corse Lawn House prides itself on offering traditional hospitality, exceptional service and quintessentially Anglo-French dining in the heart of the Great British countryside. Corse Lawn House continues to be family owned and run, and remains a family home, giving it an added warmth to the welcome guests receive.
Guests can now enjoy the dishes devised and expertly cooked by Chris and the Corse Lawn House kitchen team within The Restaurant, Brasserie, and Snug, and in summer months, the Terrace and Garden.
